Secret Recipe: How to make Korean Fried Chicken at home?

Ingredients:

2 pounds of chicken wings or drumettes

1/2 cup frying mix

1/4 cup potato starch (or cornstarch with gluten free)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cold water

Oil for frying (vegetable or peanut oil works well)

Korean fried chicken’s sauce:

Korean fried chicken Gochujang

1/4 cup gochujang (Korean red pepper paste)

3 tablespoons soy sauce

3 tablespoons rice vinegar

3 tablespoons honey

2 cloves garlic, minced

1 teaspoon ginger, minced

Sesame seeds and chopped green onions for garnish

Instructions:

Food preparation: Chicken wings separated into drumettes and wingettes/flats and in a bowl, season the chicken with a little bit of salt, black pepper and ginger. Keep it in the fridge for 2 hours or longer (overnight recommendation).

Mixing 1/2 cup frying mix and 1/4 cup potato starch (or cornstarch with gluten free) salt, black pepper, garlic powder, and onion powder.

Slowly add 3/4 cup of the cold water to the dry ingredients, whisking continuously until you have a smooth batter. You can use a little more water for a thinner crust. Likewise, use less water for a thicker crust.

Frying: Heat the oil in a deep frying pan with a relatively low temperature 320-330°F. Dip each chicken piece into the batter, allowing excess batter to drip off, and carefully place it in the hot oil. Fry in batches to avoid overcrowding the pan. Fry the chicken for about 10-12 minutes, or until it’s golden brown and crispy. 

The sauce: Korean Fried Chicken is often enjoyed with a variety of delicious sauces and condiments that enhance its flavor like Gochujang, Soy Garlic, Honey Butter, Yangnyeom, Sesame Soy Sauce or Pickled Radish…In a separate saucepan, combine the gochujang, soy sauce, rice vinegar, honey, garlic, and ginger. Heat over low heat, stirring until the sauce thickens slightly.

Toss or hand-brush the fried chicken pieces in the sauce until they are evenly coated.
